Zucchini Slice Recipe
Serves: 4–6
Preparation time: 20 minutes
Cooking time: 30–40 minutes
Ingredients
Main Ingredients:
- 1 medium onion, finely chopped
- 500 g zucchini, grated (no need to peel)
- ½ cup frozen peas
- ½ cup frozen corn kernels
- ¾ cup reduced-fat cheese, grated
- ¾ cup wholemeal self-raising flour
- 6 large eggs, lightly beaten
- 125 g lean ham, chopped
Optional Add-Ins for Extra Flavour
- A sprinkle of dried herbs such as parsley or oregano
- 1 small grated carrot or sweet potato
- A pinch of garlic powder or mild paprika
- Ricotta or feta for a creamy twist
- Swap the ham for cooked chicken or turkey mince
Method
- Preheat oven to 180°C.
- Combine all ingredients in a large bowl and stir until well mixed.
